Coconut and Honey Ice Cream

This recipe was the first one I made in my ice cream maker after I bought it. There are many variations of ice cream using coconut milk instead of regular milk, but this recipe only has two ingredients. It’s both vegan and dairy-free.

This recipe isn’t really suitable for those on a low-fat diet as coconut milk contains a large amount of saturated fat.

  1. Pour the coconut milk into a bowl and add honey. Use a whisk to combine the honey with the coconut milk. If the honey is particularly viscous you can make it a bit more runny by warming it in a microwave oven for 10-15 seconds.
  2. Chill mixture for 30 minutes in the fridge and then churn in an ice cream maker according to the manufacturers instructions.
Recipe Notes

The flavour of the coconut milk is quite subtle so don't be too heavy-handed with the honey. It's easy to overwhelm the coconut with the honey, especially if it's a strong-flavoured honey.
